The key to this is to convert a decent production frame, something you
have no problem spreading the stays with, not something you feel is
too nice.
For rough-stuff riding you probably don't want that kind of frame
anyway. How's that chrome going to look under a layer of dirt?

I ran into the same problem a couple of years ago when converting a
late 80's road bike.
We all have different definitions of "reasonable price" but everything
that I though was reasonable came with a 135mm rear hub. That's way
too big for my frame and I wasn't comfortable trying to cold set a
high quality frame, especially one with chromed seat stays. I talked
to a frame builder who said he'd do it, but he did't recommend it.
Therefore, I decided to use the existing hubs which were still in
great shape, buy 650B rims and build my own wheels. Two rims and two
wheels worth of spokes were a bit pricey but the total cost was about
the best deal I could find. Then I got really busy so I just had a
local shop build both wheels. That was another $70 or so that blew my
"save money" plan but I'm happy with the wheels.

The way I handled that with my wife's aluminum Trek was to buy 130mm
spaced wheels from Rivendell and then did a reverse freewheel transplant
and put a 7spd freewheel on and respaced.
